Each year as football season is about to come to a close, I find myself looking for new and exciting game day appetizers that I have yet to try. I wanted to pass along this recipe for Chipotle Chicken Quesadilla with Lime Sour Cream to help add a little spice and variety to your usual at home tailgates. These quesadillas are an easy snack to make and are sure to be a favorite among readers’ family and friends.

Chipotle Chicken Quesadilla with Lime Sour Cream
*1 red pepper, finely chopped
*1 large chicken breast, grilled and chopped (about 1 ½ cups
*1 bunch cilantro, finely chopped (about 1 cup)
*1 large red onion, finely chopped
*3 C. grated mozzarella
*1 can chipotle peppers in adobo sauce
*10 9-inch flour tortillas (sun-dried tomato and/or spinach)
*8 oz. sour cream
*zest of one lime
*1 Tbsp. lime juice
*1 tsp. salt
1. In a large bowl, mix the red peppers, chicken, cilantro, red onion and mozzarella together.
2. Mix in about 3 tsp. or more, depending on how spicy you want it, of the adobo sauce from the canned chipotle.
3.To make Quesadillas, preheat the IMUSA Quesadilla Maker and wait for the head indicator light to turn indicating it is ready to cook.
4.Place 1 tortilla on the lower cooking surface.
5.Evenly distribute the red peppers, chicken, cilantro, red onion and mozzarella mixture.
6.Top with second tortilla.
7.Close the lid and cook for 2-5 minutes, depending on desired crispness and thickness of fillings.
8.Open lid with a potholder or oven mitt. Remove with wooden or plastic utensil. Cut into triangles; serve with salsa and avocado slices.
9.Serve with lime sour cream.
10.For sour cream: Mix the remaining ingredients together and serve in a small bowl.
